In some ways, you never get past your first love. And I’ve tried, several times, to leave Taco John’s behind. There were the years where I stopped eating fast food, and then the years I spent in a job that took me 1,600 miles west of the franchise’s Midwest base. I thought I was done. Really, I did.

But Mexican food is my favorite, and has been since I was a kid. Whether on the streets of Playa del Carmen or at a small burrito stand in the Four Corners’ desert, I cannot shake the craving. And as much as I enjoy the vast, incredible tastes of this too often pigeonholed cuisine, Taco John’s was my first love.

Happy Thursday and welcome back to the Streetwise newsletter.

This week is dedicated to creative solutions for longstanding problems. I covered both Mangiare and Ashwaubenon Bowl, which had innovative approaches to hurdles brought on by the pandemic.

First, Mangiare, an Italian restaurant that opened in downtown Green Bay in July, added a robot to its team to offer support during the worker shortage. The owner, Patrick Neph, explained how using the robot, Servi, ideally will relieve strain on his employees.

Ashwaubenon Bowl, a bowling alley and restaurant, had a lack of delivery orders during the onset of the pandemic because many didn’t think to order food from a bowling alley. To increase orders, it partnered with two delivery-only restaurants, also called ghost kitchens, and saw great returns.

If you love traditional Mexican burritos, tacos and tortas, a new restaurant opening at 160 Kenan Court aims to hit the mark by offering authentic birria, carne asada, al pastor and pollo.

While authentic meats will be a core part of the menu at the forthcoming AzTec Taqueria, vegans and vegetarians can also enjoy marinated tofu. Homemade corn tortillas and freshly-prepared green and red salsas will also be an integral part of the fare.

The business opened on Cinco de Mayo (May 5).

Owner Salvador Tecpoyotl’s own mom and dad are the culinary masterminds behind the recipes at his restaurant. Their authentic food will never have been seen in the area before, he said. These recipes and seasonings have been handed down for generations.

Here are the top 5 Mexican fast-food restaurants in Texas, per report

A report released earlier this month highlights the top Mexican fast-food restaurants in the United States as well as the top five options in each state. So, what’s America’s Mexican restaurant of choice and does this trend align with the top spot in Texas?

The report from the TOP marketing agency presents many key findings related to the hospitality industry both nationally and at the state level. Beneath a chart titled “US Taco Craze,” a graphic in the report details taco consumption across the country noting that 21.4% of respondents said they consume at least 24 tacos per month. Although about one-quarter (23.3%) said they consume zero tacos monthly and 42% stated that they consume four to 12 tacos each month.

Overall, taco consumption increased 12.8% during the coronavirus pandemic, according to the report.
