Here’s our first taste of spring! These quick weeknight dinner recipes are one-part warm and cozy and one-part fresh and bright (think asparagus and cherry tomatoes). Our recipe for Slow-Baked Salmon and Cherry Tomatoes, which tastes good and feels good, too, is the perfect example. Did we mention that it’s also a breeze to make? Another light and bright entrée is our Gingery Rainbow-Chard and Black-Rice Bowl. Colorful Swiss chard delivers tons of texture when served atop black rice.
And while we can’t wait for warm weather and sunny days, there are still plenty of cold, brisk days in March. For those times when you can’t wait to get indoors, make one of our many comforting meals. Our Spiced Chicken Kebabs with Pita, which are pictured here, come together in 40 minutes and get their flavor from za’tar, a blend of Mediterranean spices that includes sesame seeds and sumac. Or try Smoky Tofu Chili for Meatless Mondays; while many chili recipes require at least a couple of hours on the stovetop, this one cooks in just 60 minutes.
